Saucepan Cookies
Another recipe from cookie queen neighbour, Sara.
Ingredients
- 1/2 cup butter or margarine
- 3/4 cup sugar
- 2 eggs ((beaten))
- 1/2 tsp salt
- 1 cup chopped dates
- 1/2 cup chopped walnuts
- 1 tsp vanilla
- 2 cups Rice Krispies™ cereal
- 1 1/2 cups unsweetened coconut ((shredded))
Method
- In a broad saucepan, combine butter, sugar, eggs, salt, dates and walnuts.
- Cook over low heat for 10 minutes.
- Remove from heat and add vanilla.
- Cool for about 5 minutes then fold in Rice Krispies™ cereal.
- Form into balls about 1 inch in diameter.
- Roll in coconut to coat.
Recipe Notes
There is no inidcation how to store these cookies, but in an airtight container and possibly in the fridge would be a good idea to help them keep longer.
This card is full of spills and spots and I remember these cookies at Vanita's house at Christmas time each year. The ingredients seem a little less guilt inducing as far as treats go.
Scott thinks he remembers this as being Daren's favorite cookie.
