Saucepan Cookies

Another recipe from cookie queen neighbour, Sara.

Ingredients

  • 1/2 cup butter or margarine
  • 3/4 cup sugar
  • 2 eggs ((beaten))
  • 1/2 tsp salt
  • 1 cup chopped dates
  • 1/2 cup chopped walnuts
  • 1 tsp vanilla
  • 2 cups Rice Krispies™ cereal
  • 1 1/2 cups unsweetened coconut ((shredded))

Method

  1. In a broad saucepan, combine butter, sugar, eggs, salt, dates and walnuts.
  2. Cook over low heat for 10 minutes.
  3. Remove from heat and add vanilla.
  4. Cool for about 5 minutes then fold in Rice Krispies™ cereal.
  5. Form into balls about 1 inch in diameter.
  6. Roll in coconut to coat.

Recipe Notes

There is no inidcation how to store these cookies, but in an airtight container and possibly in the fridge would be a good idea to help them keep longer.

This card is full of spills and spots and I remember these cookies at Vanita's house at Christmas time each year. The ingredients seem a little less guilt inducing as far as treats go.
