
Lazy Cabbage Rolls

Ukrainian style without the extra effort. This one looks super easy!
This card is listed as coming from Judy–that would be Vanita’s sweet sister-in-law who is known for her awesome recipes.
Ingredients
- 1/2 pound+ 3 slicesbacon
- 1medium-largeonion (diced)
- 1/2large jarsauerkraut (4 cups*)
- 1cupregular long grain rice(uncooked)
- 1/2cupwater + more
Method
- Place 3 slices of raw bacon in the bootom of roaster pan or a casserole dish.
- In a large, deep frying pan, sautee 1/2 lb bacon and diced onion.
- Add 1/2 large jar of sauerkraut and 1 cup uncooked rice.
- Add 1/2 cup of water and cook until some of the liquid boils away.
- Put mixture in casserole over the bacon slices and add some H₂O.
- Bake covered 1 and 1/2 hours at 350°F. Add H₂O if required to avoid burning.
Recipe Notes
*The recipe card does not specify what size jar of sauerkraut to use. The average size I see in the stores is two litres so half would be 1 L or 4 cups. I have seen gallon sized jars of the stuff, but I think that might be a bit much for the amount of meat in this one. Unless you love sauerkraut, then, you do you.
