
French Onion Soup

Ingredients
- 1Tbspbutter
- 1largeonion
- 3cans*consumme
- 1pkgswiss cheese slices(8)
- 8ozwater
- 1/4cupred wine
- –enoughslices croutons or toasted breadfor 8 bowls of soup
- 8Tbspshredded parmesan cheese
Method
- Slice onion and fry in butter until transparent.
- Add consumme plus 8 oz water
- Add wine.
- Place one slice of cheese in bottom of a soup bowl and add soup.
- Place crouton (or toasted bread slice) on tip.
- Sprinkle parmesan cheese on top of each.
- Bake at 375° F for half an hour.

The recipe card says * 3 cans of consumme. Traditionally this would be beef based, but you know what I always say–you do you babe!
I’ve estimated that it should be 8 oz cans for a total of 24 ounces (or 3 cups) Mathematically, adding this and the water and the smidge of wine should get you about 8 servings of about five ounces each. You could put cheese slices on bottom and top and make only 4 servings of 8 ounce bowls of soup to bake instead.
Also, my experience tells me that you may want to fry those onions until they are reduced and carmelized for the best flavour for this soup.
