
Newfoundland Five Star Cookie Bars (Aero Bars)

We went to visit Bailey while he was away at university in Antigonish, NS. He took us to this local 'famous' bakery, tucked inside a convenience store. We found these bars that were called "Aero Bars" and they are epic and amazing! It was really hard to find the recipe though because they're more properly known as Newfoundland Five Star Cookie Bars. Maybe S & L Bakery wanted to keep those Newfies out of it? I thought they were called Aero Bars because of the chocolate that's best to use in them, so I was none the wiser until I found the recipe. Credit to Lord Byron's Kitchen for the recipe and I'm printing here to share with my family forever!
Ingredients
- 1/4cupbuttermelted
- 2cupsgraham crumbs
- 2cupsunsweetened coconut(fine or medium shred)
- 14ouncessweetened condensed milk(canned)
- 1tspvanilla
- 5wholeAero™ chocolate bars
Method
Preheat oven to 350 ℉.
- Line an 8 x 8 inch pan with parchment paper and set aside.
- Add the butter, vanilla, and sweetened condensed milk to a large bowl. Blend together with a hand held mixer. (It's not about beating the ingredients together here, just stirring them together well.)
- Add the coconut and graham crumbs. With mixer on low speed, incorporate the dry ingredients into the wet.
- Transfer this mixture to the parchment lined baking pan. Press it flat to the corners.
- Bake for 20 minutes.
- While the squares are baking, take this time to unwrap and break up the Aero™ bars into chunks.
- As soon as the bars are out of the oven, spread the broken chocolate bars across the top of the quares and allow them to sit for five minutes.
- Use an offset spatula to evenly spread the softened, melted chocolate over the surface of the bars.
- Allow the pan of bars to cool at room temperature - at least 3 hours!
- Lift the bars out using the parchment paper. Cut into 16 squares. Store in the fridge in an air tight container. Can also be frozen.
