Who doesn't love a good carrot cake, especially with cream cheese frosting?

Ingredients

  • 2cupflour
  • 2cupssugar
  • 2tspbaking soda
  • 1/2tspsalt
  • 1cupvegetable oil
  • 2tspcinnamon
  • 1tspallspice
  • 4largeeggs
  • 3cupscarrots(finely grated)

Method

Preheat oven to 350 ℉. Grease and flour a 9" x 13" cake pan.

Sift dry ingredients into a large bowl. Add oil and stir well. This mixture will be thick.

Add eggs, one at a time, mixing well after each addition. Add carrots and blend well. Pour batter into a greased pan and spread evenly.

Bake at 350 for 40-50 minutes.
