This recipe was filed near the card for 'Funny Cake'. There were no directions, only a list of ingredients and amounts. So I've filled in the directions as best I can. But if you know better how to make pie pastry-by all means, do it your way because this is not my strong suit (to say the least!)

Ingredients

  • 1lblard(shortening such as Crisco)
  • 5cupsflour
  • 1egg
  • 1tspvinegar
  • -.9cupswater *see instructions for note

Method

 

  1. Cut lard into chunks in a large bowl.
  2. Add flour to lard and using a pastry knife or a fork, cut the lard into the flour until it resembles oatmeal sized pieces. (Do not use your bare hands for this as it will warm the lard and make your pie crust tough.)
  3. In a measuring cup, crack the egg, add the vinegar and then fill the cup with water * to the one-cup mark. * Mix the egg and water until blended, and the egg is slightly scrambled.
  4. Add this mixture to the flour mix, stirring until combined and holds together.
  5. Turn dough out onto lightly floured surface and roll to size and shape needed.

I would estimate this is enough pastry for four 9" pie shells. For ease of handling, you can roll the pastry between two sheets of parchment or wax paper and it makes it easier to turn out into your pie plates.

 

It was filed in the recipe box near the recipe for Funny Cake. Since it referred to "prepare the pastry mix", I guess you're supposed to use this entire recipe in the shell for the Funny Cake?
