
Sweet & Sour Sauce

Great with some egg noodles and meatballs.
Ingredients
- 2 T. Cornstarch
- 1 can pineapple* chunks + juice
- 3/4 c. vinegar
- 1/2 c. brown sugar
- 1/2 c. large chop red onions
- 1/2 c. large chop sweet peppers
- 2 T. tomato paste
- Optional: 1/2 c. cherry tomatoes (frozen preferred)
Instructions
- Add vinegar and cornstarch to medium sauce pan and whisk together until cornstarch is dissolved.
- Add remaining ingredients except optional items and stir until well combined.
- Cook over medium heat and allow to come to a boil. Simmer for about 10 minutes until thickened.
- If desired, in last 5 minutes of simmering, add frozen cherry tomatoes.
- Serve hot over noodles or rice with meatballs or other desired proteins.
Notes
*If you don't like pineapple (or you don't like the mouth tingle from it,) you can substitute extra water (about 1/2 cup) and a different fruit. I have successfully used blueberries and apples in place of the pineapple.
